3 CDA recipies

Post #1 made 15 years ago
I've brewed all three of these recipes. The first turned out extremely well and I wanted to do an Imperial version of it with some changes. So the second is based off it with some changes to the hops and grain bill. The second is currently conditioning in bottles, but tastes GREAT so far. The third recipe was made with some tips from the brewers at Deschutes based off their Hop in the Dark release. That one is still fermenting. These are all screengrabs from BeerAlchemy.

Thanks for the recipes! I will "Hop" to it as soon as I get a chance or a loan from my bank to buy all the hops. I am a hophead so I will have a go at it.
tap 1 Raspberry wine
tap 2 Bourbon Barrel Porter
tap 3 Czech Pilsner
tap 4 Triple IPA 11% ABV

Pipeline: Mulled Cider 10% ABV

I just tried the second recipe after about 2 weeks in the bottle. It's hands down the best beer I've ever made. VERY good. The third recipe is ready to be racked to secondary now.

I'm a fairly inexperienced (1 year homebrewing) brewer planning to brew CDA v1.0 for my first or second BIAB batch. A couple of questions...

1. Are you doing a "standard" 154F 60-min mash followed by a 170F mash-out?

2. I wasn't able to get "German Carafa II", so I bought "Weyermann Dehusked Carafa II". Any issue there? From what I can tell the difference is that the "dehusked" grain will not contribute bitterness from roasted husks.

3. Hops that I bought have a significantly higher AA content than in the original recipe. I enjoy hoppy ales, so this is not a problem per se, but I just wanted to point that out in case someone had an opinion.

4. Screenshot from Hopville is attached:
