What kind of scoop should I use?
Should I go necessarily with stainless steel? Or wood is ok too?
I have a plastic one that came with the fermenter but I don't know if it can take the heat of the pre-boiling and boiling phase.

By scoop I guess you mean stirring spoon/mash paddle?

I would love a stainless spoon/paddle but I cant justify the cost. They are very expensive. Someone made me a wooden mash paddle but I used it once and found it pretty clumsy to use. Plus its impossible to clean well (who knows whats growing on it between use) and trying to remeber when to put in to boiling wort at the right time to sterilise it is more trouble than its worth.
The white plastic ( nylon I think?) one I got with with my first kit works great. No troubles with boiling wort and easy to clean. As long as the handle is long enough. I think my handle is about 40-50cm but I have plenty of room in my pot too.
The plastic spoons are fine to use imho.

A potato masher style paddle is definitely the way to go.
