No quiet places in Honolulu Bob. At least not 32 years ago. :argh:
Holy crap it's been that long! The saving grace I found is that there are some good beer stores,at leaast on Maui and Kauai where we started goimg for peace. Actually the cCostcos have some good beer in stock too. I was getting SN pale ale for $25/24 and got hooked on em!

Well, I survived the trip to Honolulu. Whilst there I tried all three offerings from the Kona Brewery - Long Board, Hot Rock and Big Wave. I was particularly impressed by the Big Wave Golden Ale. I know that this is a stab in the dark, but does anyone have or know of a recipe for this great drop of beer?

Thanks Joshua, that should get me on the right track although we can't get honey malt over here. There is talk of using Melanoidin as a substitute.

Hi,

I recently tasted their Golden Ale, and agree that this is a fantastic summer time refresher. Quite lovely. I think the recipe attempts posted at the links referenced earlier in this thread are somewhat off the mark as it appears that the brewer has subsequently modified the recipe. From the brewer's website:

Bitterness: 21 IBU
Alcohol by Volume: 4.4%
Original Gravity: 10.3° P
Malts: PALE (PREMIUM 2-ROW), Caramel
Hops: GALAXY, CITRA

Any recent attempts and feedback from fellow members? I have never brewed with citra hops, but I imagine that this is what gives the ale it's wonderful notes of tropical fruit, etc.

Drinking this now, and am very pleased with the way it turned out. Well balanced with notes of tropical fruit (passion fruit) and citrus. As an addendum to the recipe posted earlier, I added all remaining hop pellets from the 1oz sachets a few minutes into chilling. Hoping I can reproduce this brew in the future :P . Never tried the same recipe more than once ...

Cool :salute: . I reviewed my recipe again, and noted that the grain bill I used was slightly different. So for the record:

87.6% 2-Row Pale Malt (Prairie Malt) (3.5 EBC = 1.8 SRM) 3921 grams = 8.64 pounds
7.9% Crystal 10L Malt (Briess) (25.2 EBC = 12.8 SRM) 352 grams = 0.78 pounds
4.5% Carapils Malt (Briess) (2 EBC = 1 SRM) 201 grams = 0.44 pounds

The Hop Bill (Based on Tinseth Formula)

9.8 IBU Amarillo Pellets (8.2%AA) 10.2 grams = 0.361 ounces at 60 mins
4.9 IBU Amarillo Pellets (8.2%AA) 10.2 grams = 0.361 ounces at 15 mins
7.8 IBU Citra Pellets (13.2%AA) 25.5 grams = 0.898 ounces at 5 mins

(all remaining hops from the 1oz sachets were added a few minutes into chilling)

I carbed to 2.5 CO2 volumes.

Hey Todd, have you brewed this yet? I brewed up another batch on Monday. I replaced all the carapils with the crystal, and am fermenting with Pacman yeast. Am thinking of dry hopping with 1oz citra pellets for the last 3 days of secondary. Do you think a low gravity beer will stand up to this?
